Zucchini-Pecan Muffins

A few days ago we had a ton of zucchini so my mom made zucchini-pecan muffins. They were so good that I had to share them with you. She used a zucchini recipe from the Wholesome Dish and put it in a muffin tin to make muffins. The recipe used zucchini, sugar, brown sugar, eggs, vanilla, apple sauce (we did not include this), vegetable oil (she used avocado oil because it is delicious), baking powder, baking soda, salt, and cinnamon (she also put a pecan on top of each muffin).

Over quarantine we have gotten some fruit and vegetable boxes. There are companies that will deliver fruits and veggies to your house. It is a great way to stay healthy while staying away from the stores.
