Ahh, breakfast. The wonderful tastes that come with the day's first meal give you a relaxed, happy start to the stress of work, school, or whatever else you could be doing. The best way to make great breakfasts is to experiment with foods you like. One of my favorite breakfasts, is an over medium egg with some cheddar cheese and salsa added on top when the egg is done. We also make cheese eggs, which have parmesan cheese whisked in. There is also the classic breakfast burrito, which has refried beans, scrambled eggs, hash browns, avocado, salsa, and if you want, you can add bacon or sausage. We use morning star farms veggie sausage. It has great taste without the grease. Another great dish is a fried egg with some turmeric. If you don't like eggs, Trader Joe's has great frozen steel cut oatmeal. Toasted sourdough is a great side for any breakfast, and can be used to soak up runny yolk. Breakfast is a great way to start the day, and should be eaten every day.
These are the Huevos Rancheros from Café Pascual's in Santa Fe. You can make this dish very easily at home. The one thing that sets this dish apart is that it has New Mexico red chilies in the salsa.
